Ingredients

  • 1 lb Pizza dough (homemade or store-bought)
  • 1/2 cup Pizza sauce (marinara)
  • 1.5 cups Mozzarella cheese, shredded
  • 1/2 cup Bell peppers, sliced (mixed colors)
  • 1/4 cup Red onion, thinly sliced
  • 1/2 cup Mushrooms, sliced
  • 2 tbsp Black olives, sliced
  • 1/2 cup Fresh baby spinach
  • 1/4 cup Cherry tomatoes, halved
  • 1 tsp Dried oregano
  • 1 tbsp Olive oil (for brushing crust)
  • to taste Red pepper flakes

Equipment

  • Pizza Stone or Baking Sheet
  • Pizza Cutter
  • Rolling Pin

Method

  1. Preheat your oven to 475°F (245°C). if using a pizza stone, place it in the oven during preheating.
  2. On a lightly floured surface, stretch or roll out the pizza dough into a 12-inch circle. Transfer to a pizza peel or a parchment-lined baking sheet.
  3. Spread the pizza sauce evenly over the dough, leaving a 1-inch border for the crust. Sprinkle 1 cup of the mozzarella over the sauce.
  4. Layer the spinach first, then top with bell peppers, onions, mushrooms, tomatoes, and olives. Sprinkle the remaining 1/2 cup of cheese and dried oregano over the top.
  5. Brush the exposed crust with olive oil. Bake for 12-15 minutes until the cheese is bubbly and slightly browned and the crust is crisp.
  6. Remove from oven, sprinkle with red pepper flakes if desired, and let rest for 2 minutes before slicing.

Notes

To avoid a soggy crust, sauté the mushrooms briefly before adding them to the pizza to release their moisture. Preheating your pizza stone or baking sheet for 30 minutes is the secret to a professional crust.
