Servings: 4 jars
Course: Side Dish
Cuisine: American

Ingredients

  • 1/2 cup Cilantro Lime Vinaigrette Divided between jars.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Cucumber Diced.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Frozen, canned, or roasted.
  • 2 cups Cooked Chicken Breast Shredded or cubed.
  • 4 cups Chopped Romaine Lettuce Dry and crisp.
Optional: Feta cheese, pumpkin seeds, or sliced radishes.

Equipment

  • 4 Quart-sized Mason Jars

Method

  1. Layer 1 (The Base): Pour 2 tablespoons of dressing into the bottom of each of the four Mason jars. This keeps the liquid far away from the lettuce.
  2. Layer 2 (The Barrier): Add the hardy vegetables. Divide the cherry tomatoes and cucumbers equally. These can sit in the dressing without getting soggy and actually marinate slightly.
  3. Layer 3 (The Bulk): Add the black beans and corn. These provide a sturdy secondary barrier.
  4. Layer 4 (The Protein): Divide the cooked chicken breast between the jars. Placing the protein here keeps it cool and fresh.
  5. Layer 5 (The Topping): Pack the remaining space with the chopped romaine lettuce. Press it down slightly if needed, but ensure it remains dry. Top with any optional seeds or cheese.
  6. Seal and Store: Tighten the lids and store in the refrigerator for up to 5 days. When ready to eat, shake the jar vigorously to distribute the dressing or pour the contents into a bowl.

Notes

Ensure your lettuce is completely dry before packing. If it's damp, it will wilt much faster. Using a salad spinner is highly recommended.
