  • 6 cups fresh freestone peaches, sliced
  • 1 tablespoon lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, chilled and grated
  • 1/2 cup boiling water
  • 2 tablespoons cinnamon-sugar mixture for topping

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with lemon juice, sugars, cinnamon, nutmeg, and cornstarch until well-coated.
  3. Pour the prepared peach mixture into a 9x13 inch baking dish.
  4. In a separate mixing bowl, whisk together the flour, baking powder, and salt.
  5. Fold in the grated, chilled butter until the mixture resembles coarse crumbs.
  6. Gently stir in the boiling water until the dough is wet and shaggy.
  7. Drop spoonfuls of the batter over the peach mixture in the baking dish.
  8. Top with the extra cinnamon-sugar mixture for a crunchy finish.
  9. Bake for 35 to 40 minutes, or until the top is golden brown and the filling is bubbly.

Notes

For a Keto-friendly version, substitute all-purpose flour with a blend of almond flour and unflavored protein powder and use a granulated sugar sugar-free alternative. Ensure the butter is cold before grating to maintain the crust's texture. Serve warm with vanilla ice cream or a dollop of whipped cream.
