The 2025 Champion: Loaded Bacon Cheddar Potato Skins

Earning the title of the '2025 Snackable Champion,' these potato skins are the gold standard of football food. The secret lies in a triple-bake process: first to soften the potato, second to crisp the skin with olive oil and sea salt, and third to melt the sharp cheddar into the nooks and crannies. Topped with smoky bacon and a cool lime-spiked sour cream, they offer the ultimate contrast in texture and temperature.

Ingredients

  • 6 medium Russet Potatoes Scrubbed clean; russets have the thickest skin for crisping.
  • 2 tbsp Olive Oil To rub on the skins for maximum crunch.
  • 1 1/2 cups Sharp Cheddar Cheese Freshly shredded for the best melt.
  • 1/2 cup Bacon Bits Crisped and crumbled (about 6-8 slices).
  • 1/2 cup Sour Cream Full fat is recommended for the best flavor balance.
Garnish: 2 tbsp chopped fresh chives or green onions, and optional pickled jalapeño slices.

Method

  1. Initial Bake: Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake directly on the oven rack for 45-50 minutes until tender. Let them cool enough to handle.
  2. Prep the Shells: Cut each potato in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch shell. (Save the potato flesh for mashed potatoes later!).
  3. The Crisp: Increase oven heat to 450°F (230°C). Brush both the inside and outside of the potato shells with olive oil and sprinkle with salt. Place them skin-side up on a baking sheet and bake for 10 minutes, then flip and bake for another 5 minutes until golden and crispy.
  4. The Load: Fill each crispy shell with a generous amount of cheddar cheese and bacon bits. Return to the oven for 2-3 minutes or until the cheese is bubbling and melted.
  5. Serve: Top with a dollop of sour cream, fresh chives, and jalapeños if using. Serve immediately while the skins are at their crispiest.

Notes

For a 'Pro' move: Stir a little lime juice and a pinch of smoked paprika into your sour cream before topping for an extra layer of flavor.
