Ingredients

  • 2 cups almond flour
  • 1/3 cup coconut flour
  • 3/4 cup unsalted butter, softened
  • 2 cups erythritol (or monk fruit sweetener)
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh strawberries, chopped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup high-quality unflavored whey protein isolate
  • Optional cream cheese filling: 8 oz softened cream cheese, 1/3 cup powdered erythritol (or monk fruit), 1/4 cup grated graham cracker crumbs

Method

  1. Preheat oven to 350°F (180°C)
  2. Whisk almond flour, coconut flour, whey protein, baking soda, and salt in a bowl
  3. Beat butter, erythritol, and egg yolks until light and fluffy
  4. Fold in flour mixture and vanilla extract
  5. In a separate bowl, whip egg whites until stiff peaks form and incorporate gently into dough
  6. Chop strawberries and mix with lemon juice and 2 tablespoons sweetener
  7. Simmer strawberry mixture over medium heat for 8-10 minutes until thickened, then cool
  8. Fill half the cookies with cooled strawberry reduction or optional cream cheese mixture
  9. Bake un-filled cookies for 10-12 minutes, fill cooled cookies by hand, then re-bake 2-3 minutes to firm filling
  10. Cool on wire racks before serving

Notes

For strict keto version use 3:1 almond to coconut flour ratio
Whey protein adds 8g protein per cookie without grainy texture
Strawberry reduction thickens better if simmered gently, not boiled
Optional cream cheese filling improves amino acid profile
Cookies stay moist in an airtight container up to 3 days
Grease baking sheets to prevent reduction from sticking after re-baking
