Ingredients

  • 1 lb boneless skinless chicken breast, cubed
  • 1 tbsp avocado oil
  • 3 cloves garlic, minced
  • 8 oz whole wheat or protein-enriched pasta
  • 2 cups chicken broth (low sodium)
  • 1/2 cup non-fat Greek yogurt
  • 1/2 cup fresh grated Parmesan cheese
  • 1 tbsp dried Italian herbs
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 cup zucchini ribbons or cauliflower florets (optional)
  • Fresh parsley for garnish

Method

  1. Season the cubed chicken breast with sea salt, pepper, and Italian herbs.
  2. Heat the avocado oil in a large skillet over medium-high heat and sear the chicken until golden brown.
  3. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the pasta and cook according to package directions, allowing it to absorb the broth until the liquid reduces into a light sauce.
  6. Stir in the cauliflower or zucchini if using, and cook until tender.
  7. Remove from heat and stir in the Greek yogurt and Parmesan cheese until creamy.
  8. Serve immediately garnished with fresh parsley.

Notes

Ensure you add the yogurt and cheese after removing the skillet from the heat to prevent the sauce from curdling due to high temperature.
If the sauce is too thick, add a splash of reserved cooking liquid or water to reach your desired consistency.
Store leftovers in an airtight container for up to 3 days.
