Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, finely chopped
  • 2 bell peppers (any color), diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1 (28-ounce) can fire-roasted diced tomatoes
  • 6 large eggs
  • Salt and black pepper to taste
  • Optional: 1/2 lb ground turkey (for extra protein)

Method

  1. Heat olive oil in a large skillet over medium heat. Sauté onion until translucent, 4-5 minutes.
  2. Add bell peppers and sauté until softened, 5 minutes. Stir in cumin, paprika, and turmeric, coating vegetables.
  3. Pour in tomatoes, simmer 10-12 minutes until thickened. Season with salt and pepper.
  4. Make 6 wells in the tomato mixture, carefully crack an egg into each. Cover skillet and cook 4-6 minutes until eggs are set to desired doneness.
  5. Optional: Add turkey before tomatoes for extra protein.

Notes

Use any heavy-bottomed pan if cast iron unavailable. Serve with cauliflower rice for low-carb version. Leftovers keep up to 3 days. Chorizo substitute: Use turkey or mushroom-based alternatives if avoiding animal protein.
