Method
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with coconut oil.
- In a large bowl, mash the ripe bananas thoroughly with a fork until smooth and liquid.
- Add almond butter and egg to the mashed bananas. Whisk vigorously until well combined and creamy.
- Add almond flour, vanilla extract, baking soda, cinnamon, nutmeg, and salt. Stir until just combined—do not overmix.
- If using chocolate chips, fold them gently into the batter.
- Divide batter evenly among the 12 muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean and muffin tops are golden brown.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
Notes
Use overripe bananas with brown speckled skins for maximum sweetness and moisture. Ensure almond butter is runny and well-stirred. For fully paleo and dairy-free, use paleo-friendly dark chocolate chips (no dairy). Store in an airtight container at room temperature for 2 days or refrigerate for up to 1 week. No alcoholic ingredients used.
