Ingredients

  • 8 large eggs
  • 1 cup cottage cheese
  • 1 cup sharp cheddar cheese, grated
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 dashes hot sauce (optional)
  • Cooking spray for pan

Method

  1. Preheat your oven to 350°F (175°C) and liberally grease a silicone muffin pan.
  2. In a high-speed blender, combine the eggs, cottage cheese, salt, pepper, onion powder, garlic powder, and hot sauce.
  3. Blend on high until the mixture is completely smooth and no curds remain visible.
  4. Stir in the grated cheddar cheese and chopped chives by hand.
  5. Pour the batter evenly into the muffin wells, filling each about 3/4 of the way.
  6. Bake for 20-25 minutes until the tops are set and slightly golden.
  7. Allow the bites to cool slightly in the pan before removing; they will deflate slightly, which is normal.

Notes

Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30-45 seconds. Use a silicone pan to ensure the bites do not stick, as their delicate texture can be difficult to remove from metal tins without significant greasing.
