Ingredients

  • 4 ripe peaches, rinsed and sliced
  • 4 cups water
  • 2 tablespoons loose-leaf black tea
  • 2-3 tablespoons raw honey (or monk fruit/stevia, optional)
  • 1/4 cup fresh mint leaves
  • Zest of 1 organic lemon
  • 1-2 tablespoons unflavored collagen peptides (optional)
  • Ice cubes (for serving)

Method

  1. Combine water, sliced peaches, and black tea in a medium pot.
  2. Bring to a gentle simmer over medium heat for 20 minutes, stirring occasionally.
  3. Strain the mixture through a fine mesh sieve to remove solids.
  4. Stir in honey (or sweetener of choice) and collagen peptides until fully dissolved.
  5. Allow the tea to cool completely before refrigerating.
  6. Serve chilled over ice, garnished with fresh mint and lemon zest.

Notes

To minimize glycemic impact, omit honey and use 1-2 packets monk fruit syrup.
Collagen addition boosts protein by 5-10g per serving.
Store in an airtight container in the fridge for up to 3 days.
For stronger flavor, add extra peaches or steep the tea longer.
