Ingredients

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1/2 cup buffalo sauce (sugar-free for keto option)
  • 2 tablespoons honey (or monk fruit sweetener for keto)
  • 1 tablespoon olive oil
  • 1 teaspoon seasoned salt
  • 6 cups mixed salad greens (romaine, kale, spinach)
  • 1/2 cup feta or cheddar cheese, crumbled
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh herbs (chives, parsley, dill)
  • 1 tablespoon water (for thinning dressing)

Method

  1. Whisk together buffalo sauce, honey, olive oil, and seasoned salt in a large bowl.
  2. Add cubed chicken to the marinade, toss to coat, and let rest for at least 30 minutes.
  3. Thread marinated chicken onto skewers.
  4. Preheat grill over medium-high heat.
  5. Grill skewers until the internal temperature reaches 165°F, turning occasionally for even char marks.
  6. Whisk together sour cream, mayonnaise, and fresh herbs in a small bowl to create the dressing; add water if a thinner consistency is desired.
  7. Arrange salad greens in serving bowls and top with grilled chicken skewers.
  8. Sprinkle with cheese and drizzle with the homemade dressing.

Notes

For extra fiber and protein, garnish with hemp hearts or pumpkin seeds. Ensure the buffalo sauce used is free of alcohol-based vinegar additives if strictly avoiding all trace alcohol, though standard buffalo sauce and cider vinegar are generally considered non-alcoholic. Store leftover chicken in an airtight container for up to 3 days.
