Ingredients

  • 2 lbs snow crab legs
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 cup unsalted butter
  • 1/2 cup fresh garlic, minced
  • 2 tbsp Creole seasoning
  • 1 tbsp smoked paprika
  • 2 fresh lemons, juiced and halved
  • 4 cups vegetable broth
  • 1 bunch fresh parsley, chopped
  • Optional: 4 hard-boiled eggs for added protein

Method

  1. In a large stockpot, combine vegetable broth, Creole seasoning, and smoked paprika, bringing it to a roiling boil.
  2. Add the crab legs to the boiling liquid and cook for about 5 minutes.
  3. Add the jumbo shrimp to the pot and cook for an additional 3-4 minutes until opaque.
  4. While the seafood cooks, melt the butter in a pan over medium heat, add minced garlic, and sauté until fragrant but not browned.
  5. Remove the garlic butter from heat and stir in the fresh lemon juice and chopped parsley.
  6. Drain the seafood, place it on a serving platter, and pour the garlic butter sauce generously over the top.
  7. If using hard-boiled eggs, add them during the final 5 minutes of the boil to soak up the aromatics.

Notes

To keep this meal strictly keto, omit potatoes or serve with boiled radishes which mimic the texture of potatoes. The seafood is best served hot immediately after tossing in the garlic butter. Store leftovers in an airtight container for up to 24 hours.
