Method

Prepare the Salmon
  1. If using raw salmon, bake at 200°C for 12–15 minutes or air-fry at 190°C for 10 minutes.
  2. Let it cool slightly, then flake it with a fork.
  3. If using canned salmon, drain well before mixing.
Mix the Spicy Salmon Filling
  1. In a medium bowl, combine:
  2. Flaked salmon
  3. Mayonnaise
  4. Sriracha
  5. Soy sauce
  6. Rice vinegar
  7. Garlic powder
  8. Stir until creamy and well combined.
  9. Taste and adjust heat by adding more sriracha if you like it spicier.
Make the Sushi Rice
  1. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  2. Fold this mixture gently into warm, cooked rice.
  3. This creates classic sushi rice flavor—slightly tangy and seasoned.
Assemble the Layers
  1. Lightly grease an 8x8 or 9x9 baking dish.
  2. Press the sushi rice into the bottom of the dish.
  3. Sprinkle a generous layer of furikake over the rice.
  4. Spread the spicy salmon mixture evenly over the top.
Add the Toppings
  1. Sprinkle shredded mozzarella on top for a creamy, melty finish.
  2. Alternatively, drizzle Japanese mayo and sriracha in zigzag patterns.
  3. Top with extra furikake if desired.
Bake
  1. Bake at 190°C for 12–15 minutes, or until bubbling and lightly golden.
  2. Let it rest for 5 minutes before serving so it sets slightly.
Serve
  1. Scoop a warm portion into a piece of nori.
  2. Add cucumber or avocado slices for freshness.
  3. Fold into a little handroll and enjoy.

Notes

Use short-grain rice

It’s stickier and ideal for the sushi texture.

Don’t skip the furikake

It adds seaweed, sesame, and savory notes that mimic traditional sushi rolls.

Adjust spice level

Sriracha, chili crisp, or spicy mayo can make it mild or very bold.

Let it rest before scooping

This helps the rice and salmon hold together better.
