Ingredients

  • 1 turkey or chicken sausage patty (per serving)
  • 2 liquid egg whites
  • 1 English muffin (or low-carb alternative)
  • 1 slice of cheddar, provolone, or another mild cheese
  • Everything Bagel Seasoning to taste
  • Optional: spinach or sun-dried tomatoes for Mediterranean flavor

Method

  1. Preheat a non-stick skillet or pan over medium heat.
  2. Add a turkey or chicken sausage patty and cook until browned and fully cooked, about 3-4 minutes per side.
  3. While the sausage cooks, prepare the egg whites. Pour the liquid egg whites into a small bowl and season with Everything Bagel Seasoning.
  4. Heat a non-stick pan or oven-safe mold. Pour in the seasoned egg whites and cook gently until set, either on the stovetop or in the oven at 350°F (175°C) for 8-10 minutes.
  5. Toast the English muffin if using the traditional version. If using a keto alternative like an almond flour muffin or egg white disc, ensure it is slightly warmed.
  6. Place the cheese slice on top of the cooked sausage patty while pan-toasting to melt.
  7. Assemble the sandwich by placing the cooked egg whites on one half of the muffin, followed by the cheesy sausage patty. Top with the second half of the muffin or another egg white disc for a low-carb version.
  8. Serve warm and enjoy!

Notes

For a keto version: swap English muffins with almond flour coconut flour bread or egg white discs.
Use sharp, full-fat cheese to increase healthy fat content.
Make the sandwiches ahead of time and store in the freezer.
To save time, cook and freeze preassembled egg white 'breads'.
Everything Bagel Seasoning is optional but greatly enhances flavor.
