Ingredients

  • Chicken breasts: Boneless and skinless work best.
  • Dill pickle juice: Straight from the jar. Choose a brand you love because the flavor matters.
  • Grated Parmesan cheese: Freshly grated gives the best melt and flavor.
  • Garlic powder: Adds warmth and savory depth.
  • Paprika: For a hint of smokiness and color.
  • Black pepper: Freshly ground is best.
  • Dill optional: Fresh or dried for extra pickle-inspired flavor.
  • Olive oil or melted butter: Helps the Parmesan mixture stick.

Method

Step 1: Marinate the Chicken
  1. Place the chicken breasts in a bowl or zip-top bag and pour in enough dill pickle juice to cover them. Marinate for at least 30 minutes, but up to 3 hours for a stronger flavor. The pickle juice tenderizes the chicken and ensures it stays juicy during baking.
Step 2: Mix the Parmesan Coating
  1. In a bowl, combine grated Parmesan, garlic powder, paprika, black pepper, and dill if using. This mixture will form a flavorful crust on the chicken.
Step 3: Coat the Chicken
  1. Drizzle olive oil or melted butter over the chicken, then press each piece into the Parmesan mixture until fully coated. Place the coated chicken into a baking dish.
Step 4: Bake
  1. Bake at 400°F (200°C) for 25–30 minutes, depending on thickness. The chicken should reach an internal temperature of 165°F (74°C).
  2. The top will turn golden, crispy, and cheesy.
Step 5: Rest and Serve
  1. Let the chicken rest for 5 minutes before slicing. This keeps the juices inside and ensures every bite is tender.
