  • 2 tbsp melted butter
  • 2 garlic cloves minced
  • 1 tsp Italian seasoning
  • 1 tbsp chopped parsley
  • Zest of 1 lemon
  • 1 tbsp lemon juice for serving

Method

Prepare the Salmon
  1. Preheat your oven to 200°C.
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. Pat the salmon dry with a paper towel, then place the fillets on the baking sheet.
  4. Drizzle them lightly with olive oil, then season with salt and pepper.
Make the Parmesan Topping
  1. In a medium bowl, mix together:
  2. Parmesan
  3. Breadcrumbs
  4. Melted butter
  5. Garlic
  6. Italian seasoning
  7. Lemon zest
  8. Parsley
  9. Stir until the mixture resembles moist breadcrumbs and sticks together when pressed.
Add the Crust

  2. Make sure each piece is evenly coated for consistent browning.
Bake the Salmon
  1. Bake for 12–15 minutes, depending on the thickness of your salmon.
  2. You’ll know it’s done when:
  3. The crust is golden and crisp
  4. The fish flakes easily with a fork
  5. The internal temperature reaches 52–55°C for moist, medium doneness
Serve
  1. Squeeze fresh lemon juice over the salmon before serving to brighten the flavors.
  2. This small step elevates the entire dish.

Notes

Don’t overbake

Salmon dries out quickly. Pull it from the oven once it flakes easily.

Pat the salmon dry

Moisture can prevent the crust from sticking properly.

Use finely grated Parmesan

This helps the topping bind and crisp evenly in the oven.

Add butter

Butter melts into the topping, helping it brown and become crunchy.
