Ingredients

  • 4 bone-in chicken thighs (skin optional)
  • 2 tbsp grass-fed butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme leaves
  • 1 tsp lemon zest
  • 1 tbsp whole-grain mustard
  • 1 lb russet potatoes, peeled and cubed
  • 2 cups milk
  • 1/2 cup cream cheese
  • 6 medium carrots, peeled and sliced
  • 2 tbsp honey
  • Salt and black pepper to taste
  • 2 tbsp water (optional, for deglazing)

Method

  1. Preheat oven to 400°F (200°C)
  2. Season chicken thighs with salt, pepper, and half the thyme
  3. Heat 1 tbsp butter and 1 tbsp oil in a skillet; sear chicken 4-5 minutes per side
  4. Transfer to oven, roast 15 minutes
  5. Meanwhile, make sauce: Add 1 tbsp butter, remaining oil, garlic, lemon zest, and mustard to the skillet. Deglaze with water if needed, then simmer 5 minutes
  6. For potatoes: Cook cubed potatoes in salted water until tender. Drain, add hot milk, cream cheese, and remaining butter. Mash until smooth
  7. For carrots: Sauté in 1 tbsp butter until tender. Stir in honey and 1 tbsp butter until glazed
  8. Serve chicken drizzled with sauce, alongside mashed potatoes and carrots

Notes

For keto, substitute potatoes with cauliflower mash or celeriac puree
Use skinless thighs for higher protein-to-fat ratio
Brine chicken breasts 30 minutes (if using) in salt water to prevent drying
Warming milk/cream cheese emulsifies for fluffier potatoes
